First built as a military hospital, this impressive red-brick building now houses an upscale boutique hotel. Despite a series of renovations -- the last extensive one was in 2013 -- the property has managed to retain its Victorian charm. Wide hallways and high ceilings are just a couple of the original 19th-century details that still remain, and decor in the common spaces evokes a bygone era. The lobby is a large space with yellow-striped wallpaper, classic red and blue carpets, and cozy sitting areas with comfy armchairs and couches. This style extends to the rest of the hotel, but most rooms also incorporate more modern touches, such as vibrant pops of color and up-to-date technologies.

Ambassador Hotel is located in St Luke’s, a quiet residential neighborhood situated atop a hill above Cork City. This locale allows for fantastic views of the city and the surrounding area -- but guests looking to walk to the city center may want to note that the way back to the hotel can take up to 20 minutes. Collins Barracks, complete with a military museum, is a 10-minute walk away. Other attractions, including the English Market, the Shandon Bells Tower, and Crawford Gallery are all less than a 5-minute drive or 20-minute bus ride from the hotel. Fota Wildlife Park is a 15-minute drive away. There is a bus stop right outside the property.

The hotel offers a variety of room types, from the Classic Room with a king bed to Superior Family Rooms equipped with two doubles and a twin. They’re all spacious and bright, with an attractive mix of classic decor and contemporary pops of color; up-to-date technologies such as flat-screen TVs and free Wi-Fi; and high ceilings with crown moldings. Some rooms feature balconies with expansive city views. Bathrooms have a decidedly classic style, with white and dark green or maroon tiles, and tubs.

The hotel features a large fitness center with natural light, a sauna, and an array of machines, free weights, and Pilates balls. The highlight, however, is probably the lovely McGettigans Cookhouse and Bar. It features charming, homey decor and a solid menu made using locally sourced ingredients. The restaurant’s walls are covered in bookshelves bursting with leather-bound books, which adds a homey feel to the space. The furniture evokes a private living room, with comfy sofas and armchairs, wooden floors, and large windows.
