Am Mittwochmorgen veröffentlichte die New York Times Sam Siftons Rezension von Faustina , einem neuen Restaurant von Scott Conant im The Cooper Square Hotel . Sifton gab dem Restaurant einen Stern und beglückwünschte viele seiner Gerichte (vor allem das Schweinekotelett, von dem er sagte, dass "vielleicht das Beste der Stadt" sei), kritisierte aber sein institutionelles, "hotelisches" Gefühl (sein Wort, nicht unser). Er war nicht erfreut über den "harten Beton-Speisesaal", der mit einer lauten, überfüllten Bar verbunden ist.

In seinem Diner's Journal Blog-Post über die Rezension erklärt Sifton, dass das Essen in der Faustina zu sehr nach Essen in einem Hotel klingt, und sagt, dass nicht alle Hotelrestaurants so fühlen. Er listet seine Favoriten auf, die es richtig machen, darunter Jean-Georges bei Trump , Locanda Verde im The Greenwich Hotel und L'atelier de Joel Robuchon im Four Seasons (alle drei gehören ebenfalls zu unserer Liste der Lieblingshotel-Restaurants ) .
