Vorspeisen : Jonah Crab Cake; Meeresfrüchte-Dip
Der Krabbenkuchen war eine schöne Portion weißes Krabbenfleisch, das mit einer perfekten goldenen Kruste gebraten wurde. Das Dip, eine cremige Mischung aus Boursin-Käse, Jakobsmuscheln, Krabben und Krebsfleisch, wurde mit Pitabrot und gegrilltem toskanischen Brot serviert.
Vorspeisen: Der Hummer Roll; Wilder Alaska-Lachs
Die Hummerrolle war genau wie wir es mögen: kräftige Stücke von frischem Maine Hummer Fleisch und Mayo, und keine gehackten Gemüse oder Salat Füller.
Der kunstvoll arrangierte Lachs wurde mit gebratenem Reis, Mango-Papaya-Kraut und einer Tamarindenreduktion serviert. Die süßen und leicht würzigen Aromen ergänzten den Lachs gut.
Nachtisch : Creme Brulee; Mango Semifreddo
Die Himbeer-Kaffee-Crème Brûlée war trotz einer etwas übertriebenen Kruste sehr aromatisch, und das Halbgefrorene mit Zuckerrohr-Reduktion war luftig und nicht allzu süß. Die Würfel schmolzen buchstäblich im Mund, und der knusprige Kokosnuss-Tuiler fügte einen schönen strukturellen Kontrast hinzu.
